Ghee-Roasted Vegetable Medley
This simple yet delicious dish highlights the rich flavor of pure ghee while making a healthy, colorful, and nutrient-packed meal or side dish.
Ingredients:
- 2 medium carrots, peeled and sliced into sticks
- 1 zucchini, sliced into rounds
- 1 red bell pepper, cut into strips
- 1 cup broccoli florets
- 1 medium onion, cut into wedges
- 2-3 tablespoons pure ghee
- 2 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- ½ teaspoon turmeric powder
- Salt and black pepper to taste
- Fresh parsley or cilantro for garnish
Instructions:
- Preheat the oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup. - Prepare the vegetables:
Wash and cut all the vegetables into bite-sized pieces. Ensure they are roughly the same size for even cooking. - Mix the seasoning:
In a small bowl, combine minced garlic, rosemary, paprika, turmeric powder, salt, and black pepper. - Coat the vegetables:
